Roasted Pork Loin with Mamey Sauce.

Ingredients For Roasted Pork Loin:

  • 1-1/2 cloves garlic, minced
  • 1-1/2 teaspoons dried rosemary
  • salt and pepper to taste
  • 3/4 pound boneless pork loin roast
  • 2 tablespoons olive oil
  • 1/4 cup white wine

To Cook Pork Loin:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Crush garlic with rosemary, salt and pepper, making a paste. Pierce meat with a sharp knife in several places and press the garlic paste into the openings. Rub the meat with the remaining garlic mixture and olive oil.
  3. Place pork loin into oven for 2 hours, turning and basting with pan liquids. After 2 hours remove roast to a platter. Heat the wine in the pan and stir to loosen browned bits of food on the bottom. Serve with pan juices.

Serves 4 .


Ingredients for Mamey Coulis (Sauce):

  • 2 teaspoons olive oil
  • 1 cup peeled, seeded, and chopped mamey
  • 2 tablespoons diced onion
  • 1 garlic clove, pressed
  • 1/2 cup water
  • 1/4 cup pan drippings from above.
  • 1/2 cup dry white wine
  • 1 bay leaf
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon salt

Note: In case Mamey can´t be obtained it can be replaced with mango.

To Cook:

  1. Heat oil in a saucepan over medium heat until hot.
  2. Sauté mamey, onion, and garlic 5 minutes.
  3. Add water, wine, and bay leaf; bring to a boil.
  4. Reduce heat and simmer, uncovered, 10 minutes or until tender.
  5. Remove and discard bay leaf.
  6. Pour mixture into a food processor or blender, cover, and process until smooth.
  7. Pour through a wire-mesh strainer into a bowl; stir in lime juice and salt.

Makes 1 cup plus 2 tablespoons.
