Ingredients For Roasted Pork Loin: - 1-1/2 cloves garlic, minced
- 1-1/2 teaspoons dried rosemary
- salt and pepper to taste
- 3/4 pound boneless pork loin roast
- 2 tablespoons olive oil
- 1/4 cup white wine
To Cook Pork Loin: - Preheat oven to 350 degrees F (175 degrees C).
- Crush garlic with rosemary, salt and pepper, making a paste. Pierce meat with a sharp knife in several places and press the garlic paste into the openings. Rub the meat with the remaining garlic mixture and olive oil.
- Place pork loin into oven for 2 hours, turning and basting with pan liquids. After 2 hours remove roast to a platter. Heat the wine in the pan and stir to loosen browned bits of food on the bottom. Serve with pan juices.
Serves 4 . | Ingredients for Mamey Coulis (Sauce): - 2 teaspoons olive oil
- 1 cup peeled, seeded, and chopped mamey
- 2 tablespoons diced onion
- 1 garlic clove, pressed
- 1/2 cup water
- 1/4 cup pan drippings from above.
- 1/2 cup dry white wine
- 1 bay leaf
- 1 tablespoon fresh lime juice
- 1/2 teaspoon salt
Note: In case Mamey can´t be obtained it can be replaced with mango. To Cook: - Heat oil in a saucepan over medium heat until hot.
- Sauté mamey, onion, and garlic 5 minutes.
- Add water, wine, and bay leaf; bring to a boil.
- Reduce heat and simmer, uncovered, 10 minutes or until tender.
- Remove and discard bay leaf.
- Pour mixture into a food processor or blender, cover, and process until smooth.
- Pour through a wire-mesh strainer into a bowl; stir in lime juice and salt.
Makes 1 cup plus 2 tablespoons. | |
